Masala Jawar Bhakri/Sorghum Flatbread

Its a very common staple food of villagers in India. Tasty and Healthy but little tough to make

Ingredients

  • Sorghum/Jowar Flour 2 Cup
  • Warm Water
  • Salt
  • 1 bunch of Spring Onions finely sliced
  • 2 green Chillis finely sliced
  • 1 tomatoe finely sliced 
  • little fresh coriander
  • 1 tea spoon oil

Direction

  • Mix all ingrdients and make a soft dough. make small several round balls.
  • On a flat surface, sprinkle little jowar flour and pat the ball with your palm. Use flour as required.
  • Keep flattening the ball in circular motion to make round shape like roti/tortilla. Don't make it too thin.
  • Now the tricky part is to put this on tawa or griddle. Heat a griddle(or a flat pan) and slide bhakri from the flat surface and place it on the griddle.
  • It should be in such a way that, the lower surface of the bhakri should go on the tawa(upper surface upwards). Turn heat to low. 
  • Now sprinkle little water where ever you see dry flour.When one side is cooked turn it over and cook other side. 
  • Ideally one side should be cooked directly on heat but that cannot be achieved since this bhakri or bread is very fragile.
  • you can apply little butter or oil as required. 

Server hot with yougurt  or curry!

Chai/Indian Tea

How can I be so ignorant by not posting my favourite thing ever........Chai. May be because I take Chai so granted, cannot survive without it and its a important part of probably every indian.

Masala : Either you can get ready to use chai masal from any Indian Store or you can add your own choice of Masala just like mentioned below. My favourite is just crushed Ginger

  • 2 crushed cloves
  • 1 cardamom pods 
  • 1 cinnamon sticks, crushed
  • Pinch ground black pepper 
  • Little crushed Ginger

Ingredients

  • 1 1/2 cup milk
  • 2 1/2 Cup water
  • 3 tablespoons Loose indian tea 
  • 4 tea spoon Sugar or honey

Direction

  • Boil water in Deep Pan. Add your own masal or masala mentioned above or ready to use masala.
  • Add  tea and bring to boil. Add Milk and Sugar and boil for couple of minutes. If you like darker and stonger, boil more time.
  • Strain and Server with some Cookies.....

Seviya Kheer/vermicelli pudding

Ingredients

  • 1cup Seviya (Vermicelli) broken into 4 cm bits
  • 5 cups milk
  • 1/2 cup sugar
  • 1/3 cup almonds (sliced)
  • 1/4 cup unsalted blanched pistachio, silvered
  • pinch of ground cardamom
  • Saffron 3 strands-optional

Direction

  • Heat the ghee in a heavy bottomed non-stick pan over medium heat and add seviya and fry till golden brown, stirring constantly...don't let it burn
  • Pour the milk and wait till first boil.
  • Add almond and pistachio. You can add Kesar now.
  • Let it boil for 15-20 minutes or till you get your desired consistency.
  • Finally Add sugar and boil for couple of extra minutes.
  • Let it Cool completely or Chill before Serving.

Gobi Curry/Cabbage Curry

This recipe comes straight from my friend Pavithra's Kitchen. I often struggle with creating something out of Cabbage but this recipe solved my problem. Must say its a different and unique way to present Cabbage and I love this receipe completely. You can replace Cabbage with your choice of vegetable or meat as well such as Boiled Eggs, Beans etc

Ingredients: 

  • Salt
  • 1/2 cup Coconut
  • 1 tea spoon Garam Masala
  • 4 Garlic cloves
  • 1/2 Inch Ginger root
  • 1/4 bunch Cliantro/Coriander
  • 2 tea spoon dhaniya/coriander powder
  • 1/2 Cabbage Sliced and half boiled
  • 1 Onion Sliced
  • 1 Tomatoe Sliced
  • mustard seeds

Direction

  • Grind a paste of --- salt, coconut, garam masala, garlic, ginger, ¼ bunch of cilantro, dhaniya powder.
  • Add  oil in a pan, then mustard, sliced onion, sauté for 2 min.
  • Add tomato , then add the paste, sauté till the aroma comes then add cauliflower and let it cook.

this is how it looks like with boiled and sliced Eggs.........isn't that yummy :)
