Hash Brown Potatoes with Green Onion

I came up with this receipe when all I had Green onion and Potatoes left in my pantry ;). Its easy, Quick  and tasty.

Ingredients

  • 2 or 3 large leftover baked potatoes or you can cook 2-3  Potatoes in microwave for 6-10 minutes
  • 1 tablespoon oil
  • 2 tablespoons butter
  • 5 scallions, finely chopped, whites and greens
  • Salt and pepper
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder

Direction

  • Peel off Potatoe skin and cut them in cubes.
  • Add oil and Butter in Skillet.
  • When butter melts into the oil, add green onions and cook 1 minute. 
  • Add potatoes and cook, turning occasionally, until potatoes are crusted and golden and onions begin to brown at edges.
  • Add Salt, pepper and spices of your choice and cook for 2 more minute.
  • You can serve with eggs or Chapatti whichever way you like!!!

Sindhi Bhassar Daal/Yellow Lentil with Onions

This is one of my favourite traditional Sindhi Mung Daal receipe , very healthy, tasty, quick and you can't find on any menu ;)

Ingredients

  • 1 Cup Mung Daal
  • 2 small green Chillies chopped
  • 1 Cup Onion chopped
  • salt
  • 3 tbsp Oil
  • 1 tsp amchoor  powde or 1 tsp lemon juice
  • pich of hing/asofetida
  • 4 Cups of Water
  • 1 tsp Turmeric Powder

Direction

  • Heat oil in pan. Add asofetida. 
  • Add Onion and cook it, until they are pink.
  • Add Daal, Salt and Water. Cook till Daal is soft. 
  • You can add more water if you need. Add Turmeric, amchoor powder or Lemon juice & stir well.
  • Garnish with Coriander
