Chicken Kofta

I had chicken kofta in resturants many time and I thought it will be tough to create them at home but hey they are very very easy and wonderfull :) Here is my version of delicious chicken kofta

Ingredients

Kofta

  • 1 Pound Chicken 
  • Salt
  • 1/2 tbsp garam masala
  • 1 tbsp cumin powder
  • 2 small green chillied chopped
  • 1 tbsp ginger garlic paste- optional
  • 1/2 cup bread crums
  • 2 tbsp coriander chopped

Gravy

  • 2 medium finely chopped onion
  • 1 finely chopped tomatoe
  • 3 tbsp oil 
  • pinch of asoeftida
  • 1 tsp chilli powder
  • salt
  • 2 tsp cumin powder
  • 1 tsp giner garlic paste
  • 1/2 garam masala

Direction

  • To make kofta Add all ingredients listed above for kofta in big bowl. Mix every thing together very well.
  • make small ping pong size ball. You can either deep fry this  or bake it for 25 minutes on 300 degrees.
  • For gravy heat oil in pan, add asoeftida , bay leaves and cinamon stick.
  • Now add onion and cook it until they are cooked completely. Add tomatoe and salt and cook until tomatoes are cooked compeletely.
  • Add chilli, cumin and garam masala powder. cook for 10 minutes. Add some waterfor desired consistency.
  • Once gravy is cooked add green coriander koftas simmer for few minutes.

serve with hot rice.

Kheema/Ground Meat in Indian Way :)

Ingredients:

  • Cooking oil: 1/4 Cup 
  • Finely chopped onions (preferably ground): 1 Cup 
  • Minced Garlic: 1/4 Cup 
  • Finely chopped ginger: 1 Inch 
  • Chopped HariMirch (Serrano Pepper): 2 
  • Ground Lamb: 1-1/2 Pound --- You can add your choice of Meat. I have tried with Ground Turkey and it came out delicious
  • Green Peas:1/2 Cup
  • Turmeric Powder: 1/4 teaspoon 
  • Cumin Powder: 1 teaspoon 
  • Coriander powder: 1 teaspoon 
  • Cinnamon powder: 1 teaspoon 
  • Ground Cloves: 1/2 teaspoon 
  • Lal Mirch powder (Cayenne): 1 teaspoon 
  • Salt: 1-1/2 teaspoon 
  • Tomato Puree: 1 Cup 
  • Dahi (Yogurt): 1/4 Cup 
  • Water: 1 Cup

Directions:

  • In a heavy bottom pan, heat oil. Sautee onions till clear. Add Garlic, Ginger and Hari Mirch.
  • Continue Sautéing. Add Ground lamb. On medium heat continue cooking and breaking up the lamb, till all the lamb has turned brown. 
  • Add Peas and cook for few seconds.
  • Add Turmeric, Cumin,Coriander,Cinnamon, ground cloves, lal mirch and salt. Sautee two minutes.
  • Add Tomato Puree. Continue sautéing till it forms a mixture (shiny). Stir in Dahi.
  • Add water. Bring to boil. Simmer on medium heat for 20 minute or till done.
  • Garnish with fresh chopped Cilantro

Sometimes I get fresh tortillas and serve this  dish as delicious Tacos :)

Teewarn/Sindhi Mutton

Ingredients:
  • 800 gms Mutton chops
  • 3 Tomatoes (chopped)
  • 3 Onions (chopped) 
  • 3 Green chillies 
  • 1 Ginger 
  • 2 Garlic flakes 
  • 4 tsp Red chilli powder 
  • 2 tsp Coriander powder 
  • 1/2 tsp Turmeric powder 
  • 1 tsp Cumin seeds 
  • 4 tbsp Curd 
  • 6 tbsp Oil 
  • 4 Bay leaves 
  • Salt to taste
How to make Teewarn:
  • Grind ginger and garlic to make a paste.
  • Fry chopped onions, green chillies, cumin seeds, cardamoms, ginger garlic paste and bay leaves till golden brown.
  • Mix mutton chops and salt. Keep stirring. This is the process which makes mutton tasty.
  • Cook till mutton turns dry, it may take 1/2 hr.
  • Now add chopped tomatoes and keep stirring till Mutton,Onion and Tomatoe  are mixed up so well that onion and tomatoe almost disappears.
  • Mix red chilli powder, coriander powder and turmeric powder.
  • Now add curd and mix it well.
  • Cook till mutton is soft. Add water if needed.

Broccoli Bhurji/Spicy Broccoli with Eggs

This is my friends "Stanley's Idea". if I won't name him, I won't be able to contribute anymore because I will be dead. I have done some modifications too it, to make it more deliecious. I like this receipe because its quick, tasty and it has Broccoli which has good nutritional value.

Ingredients:

  • Broccoli Sliced - 1
  • Small Onion long sliced- 2
  • Tomatoe - 1
  • Eggs - 4
  • Coriander leaves - few
  • Coriander Powder - 1 t sp
  • Cumin Powder - 1 t sp
  • Chilli Powder -  1/2 t sp
  • Salt
  • Garam Masala - 1/2 t sp
  • Cumin seeds - 1/2 t sp
  • Oil - 1 tb sp
  • Garlic- 3 cloves

First cook Broccoli in half of the oil mentioned above. Once it done, take it out of pan and keep it aside. In same pan add oil and when oil is heated add cumin seeds and onions. Once onion turns light brown add tomatoe and smashed Garlic . Cook them till tomatoe becomes soft completely. If I am out of tomatoe, I usually add Hunt Tomatoe puree 1/3 of small can. Add Coriander powder, Chilli, salt and Cumin powder. Cook for few more minutes. Now Break eggs and add in pan, keep stirring . When eggs are half cooked, add broccoli to it. Try to fold broccoli in eggs as much as you can. Add garam masala and keep stirring until eggs are cooked completely. Garnish with coriander leaves and serve hot with Rice or chappati.

Chicken Fajitas

This one of my favourite  mexican recipe and fairly simple to create. I usually make this when I want to come out of kitchen asap and want to eat something else than indian cuisine.

Chicken Fajitas

  • 4 boneless skinless chicken breasts
  • 1/4 stick butter
  • 1 cap full Mrs. Dash (regular or chipotle) /you can use your own version of spices. I sometime add little Chilli powder, salt and jeera powder when I am out of Mrs. Dash.
  • 1 large onion
  • 1 green pepper
  • 1/4 brown sugar

Topping:
lettuce, tomato, sour cream, guacamole, cheese, tortillas

Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter, if you want to save time else you can cook in same pan once chicken is done, take it out and cook onion and bell pepper. Cook until onions are caramelized and peppers have crispy edges.

These fajitas are really easy to make and a little different because they're sweet and spicy. Buy a packet of tortilla and serve this chicken fajita with toppings.
