Besan Chilla/Gramflour Pancake/Pitla Chi Podi

Gram Flour is made of chick peas, widely used in Indian cuisine. Gram flour pancakes are very delicious and woderful as a side dish.

Ingredients

  • 1 cup gram flour
  • 1 tomatoe finely chopped
  • 1 onion finely chopped
  • little coriander chopped
  • 1 tsp chilli powder(you can use green chillies instead)
  • 1/2 tsp haldi/turmeric powder
  • salt
  • 1/2 tsp jeera/cumin powder
  • 1/4 tsp garam masala
  • 1/4 tsp amchoor/mango powder
  • 2/3 cup of water(approx)
  • oil/nonstick spray

Direction

  • Add all ingredients in mixing bowl except oil and water. Mix everything together very well.
  • Now add water to it and make smooth batter, don't make it too thick or too thin.
  • heat skillet, spread little oil over it or non stick spray.
  • With the help of ladle spread batter on skillet like pancake.
  • Cook one side completely and than flip it to cook other side.
  • Use rest of batter to cook remaining chillas/pancakes.
  • Enjoy as side dish or as a snack or with hot chapati!

Shepu bhaji/Dill with Garlic

Ya I know its a herb and how am I suppose to cook it as vegetable? but folks trust me it does work well. This receipe I picked up from my in-laws, works well as side dish and garlic adds extra flavor to it..........its addictive and healthy

Ingredients

  • 2 bunch of cleaned Dill/Shepu
  • 5 pods of Garlic/lahsun sliced finely
  • salt
  • oil
  • 2 green chillis chopped
  • pinch of asoefetida/hingt

Direction

  • Heat little oil in Pan. When heated add Hing/asoefetida.
  • Now add Garlic and Green Chillis, once garlic turns little reddish, add Shepu/Dill.
  • Stir Dill and cover it for 10 minutes and keep it on low.
  • it is ready to be eaten :)

Sabudana Khichdi/Nutty Tapioca

I can't express in words how much I love eating this. Usually Indians eat sabudana during fasting but they are so gud that I can keep fast just to eat them :) I tried to make them several time and failed to make the way ladies make in our home but finally I made it and that to in Microwave. No more sticky sabudana.......There are lot of ways to make them but I love this Maharastrian style.

Ingredients

  • 1 cup Soaked Sabudana/Tapioca--I usually soak them overnight and to see best results, soak them in water and just leave little extra water above sabudana. More water will result into lumpy sabudana. Next day if you feel they are overdried, sprinkle little water.
  • 3/4 cup Roasted coarsely grinded peanuts
  • little oil
  • couple of Kadi patta/Curry Leaves
  • 1 small boiled potatoe cut in cubed
  • 1/2 tsp jeera/cumin seeds
  • 1 tbsp sugar
  • 1 tsp chopped Green chili
  • 1/2 lime squeezed
  • 1/4 tsp red chili pwd
  • 2 tbsp chopped coriander leaves
  • salt as per taste 

Direction

  • Gently mix Sabudana with Peanuts, Salt, Sugar, chilli powder and potatoe.
  • In microwave safe bowl add little oil, Cumin seeds, Curry leaves and Green Chilli and microwave for 1 minute.
  • Add Sabudana mix now and microwave for 2-3 minutes take a break for couple of minutes and microwave again for 2-3 minutes. Repeat this process 1 more time and they should be cooked properly now. Based on you microwave adjust time.
  • Garnish with Coriander leaves and server with Dahi/Plain yougurt if you like or squeez Lemon.

Pohe/Flattened Rice

Most Favourite snack of Indians. I can eat this all day. Poha is flattened cooked rice. It is usually washed and drained and used to make savory dishes. Poha is available in 2 forms in the Indian grocery stores - Thick poha and Thin poha. The Thick variety is thicker as the name indicates.

Ingredients 

  • 2 cup Thick Pohe 
  • 1 large Onion, chopped 
  • 1 Potato, cubed into 1 inch cubes
  • 2 Green chilies, sliced
  • 1 teaspoon Lemon juice
  • 2-3 teaspoon Sugar
  • Salt to taste
  • 1 tbsp oil
  • 2 teaspoons Mustard seeds
  • 1/2 teaspoon Asafoetida
  • 2 teaspoons Turmeric powder 
  • few curry leaves - optional

Direction

  • Wash Pohe and rinse well until the water runs clear.
  • Drain all the water and keep aside for 10 to 15 minutes.
  • Heat oil in a pan. Add mustard seeds.
  • When they splutter, add asafoetida, turmeric powder, chopped onion, potato, curry leaves and green chilies. 
  • When potatoes are almost cooked add the sugar, salt, lemon juice.
  • Mix well. Now add  the soaked pohe. Mix well.
  • Cover and cook for about 5 minutes on medium heat. 
  • Remove the lid, stir and again allow it to cook for 2 minutes. 
  • Garnish with freshly grated coconut and coriander leaves.

Sindhi Sel Manni/Sel Fulka/Spicy Tortilla

One of my favourite dish made out of leftover Chapatis. Spicy & quick

 Ingredients:

  • 5 Ready chapattis(I usually leftover chapatis)
  • 3 tbsp Vegetable oil 
  • 1 tsp Red chilli powder 
  • 1/2 tsp Turmeric powder 
  • 2 Tomatoes 
  • 1 Garlic 
  • 2 Green chillies 
  • Chopped coriander leaves 
  • Salt to taste
How to make Manni Sel:
Heat oil in a frying pan and saute green chillies and chopped garlic.
Add turmeric powder, chopped tomatoes, red chilli powder and salt. Let it cook for few minutes.
Stir well to mix the ingredients.
Pour water and bring to boil for a while.
Now add chopped chapattis.
Simmer till the water is soaked.
Garnish Manni Sel with chopped cilantro.

Potato Sandwich

Ingredients
onion - 1
potato - 2
carrot - 2
Greenpeas - 1/2cup
mustard - 1teaspoon
uraddal - 1teaspoon
Turmeric powder - 1pinch
Greenchilli
ginger
curryleaves
coriander leaves,salt
 
Method
Boil potato and mash.Heat oil
in a pan and add mustard and
uraddal.Then add all the other
ingredients and saute.Add little
water and mixwell.Toast the bread
slices and apply butter on it.put
potato mixture between the two
slices and serve.

Grilled Veg Sandwich with Cheese

Ingredients
  • 6 Slices Wheat Bread
  • 6 Cheese slices (singles) or shredded cooking cheese
  • 1 Med. Onion finely chopped
  • 1 Med. Tomato finely chopped
  • 1 Capsicum finely Chopped
  • 1 Green Chilli finely chopped
  • Few fresh leaves of Coriander (kothmeer)
  • Salt to taste
  • Ground Black Pepper
  • Garlic Powder (optional)
  • Butter
 
Method
1) Toast the Bread slices in the Toaster (med dark).
2) Spread little Butter to only one side of bread slices.
3) Mix finely chopped Onion, Capsicum, Tomato, Green Chilli, and Coriander leaves.
4) Sprinkle some Salt, Black Pepper powder, Garlic powder to the mixer above.
5) Take one slice of bread, buttered part on the top. Put one cheese slice.
6) Now, Add one spoonfool of veg. mix and spread over nice and even.
6) Put another Cheese slice on the top of it and close it with the second slice of Bread with buttered part down.
7) Place the sandwich on microwave safe plate and microwave it for 1-2 minutes or until the cheese starts melting.
8) Repeat the step 5-7 to make another Grilled Cheese Sandwich.
9) Cut diagnoly and serve hot with Tomato Ketchup.

Tomatoe & Onion Sandwich

This is classic receipe in our house. This is one of my favorite snack Receipe because it very tasty, quick and Spicy :)

Ingredients:

  • 1 Finely Chopped Tomatoe
  • 1 Finely Chopped Onion
  • Salt
  • 1/2 t sp. Chilli Powder
  • 1/2 t sp. Garam Masala
  • 1/2 t sp. Cumin Powder
  • 1/2 t sp. Chaat Masala
  • Fresh Coriander  Chopped
  • Wheat Bread 8 Slices

Direction:

Mix all ingredients in bowl nicely except Bread. If possible try to mash it with hand. Please do not grind it. Spread this masala/mixture over one bread Slice and cover it with another slice and cook it in Sandwich Maker. If you don't have Sandwich Maker, Heat Skillet, add little oil if needed and cook sandwich on it. Turn sandwich after 1 minute and cook another side. If you want it dark and toasty, keep thali/plate over sanwich and keep some heavy box/pressure cooker over plate/thali while sandwich is on Skillet/Tava. Usually Sandwich maker does a good job and its pretty inexpensive. I bought few years back for $10 or so from Target.

Khandvi

I always loved khandvi and messed up several time before I discovered  this Microwave receipe. Finally I made it and I loved it 

Ingredients

FOR KHANDVI:

  • 1 Cup Gram Flour (Besan)
  • 3 Cup Buttermilk (Chaash/Sometime if I am out of it, I blend yogurt with some Water)
  • Salt to taste
  • Pinch Turmuric Powder (Huldi)

FOR GARNISHING:

  • 1 TBLS Oil
  • 1 TSP Mustard Seeds (Rai)
  • 1 TSP Sesame Seeds (Teel)
  • 2-3 Green Chilli thinly sliced
  • little bit of water
  • Grated fresh coconut
  • Finely Chopped Coriander Leaves (Fresh Dhania patti)
 
Method

FOR KHANDVI:

1) Mix togather Besan, Buttermilk, Salt and Turmaric Powder in a Microwave safe Bowl. Make sure all the Besan is mixed well in the Buttermilk, not a single dry bids is left unmixed.

2) Put the better in Microwave for 5 minutes.

3) Take out the better, stir well and put it back in the Microwave for 3 more minutes.

4) Take out again and stir well and put it back for 2 more mins.

5) Spread the cooked better over the Aluminium foil (or back of steel Thali) very thinly, While it's still hot.

6) Let it cool down a bit. Then, cut the strips 3 inches wide and 9-10 inches long. Roll them neatly.

FOR GARNISHING:

1) Heat the oil in small pan (Vaghariya), add Musturd seeds.

2) When mustard seeds crackels, add Sesame Seeds and Green Chillies.

3) Spread them over the Khandvi.

4) Garnished with shredded coconut and coriander leaves.

Enjoy the Khandvi, isn't it very simple!!!!!!

Broccoli Bhurji/Spicy Broccoli with Eggs

This is my friends "Stanley's Idea". if I won't name him, I won't be able to contribute anymore because I will be dead. I have done some modifications too it, to make it more deliecious. I like this receipe because its quick, tasty and it has Broccoli which has good nutritional value.

Ingredients:

  • Broccoli Sliced - 1
  • Small Onion long sliced- 2
  • Tomatoe - 1
  • Eggs - 4
  • Coriander leaves - few
  • Coriander Powder - 1 t sp
  • Cumin Powder - 1 t sp
  • Chilli Powder -  1/2 t sp
  • Salt
  • Garam Masala - 1/2 t sp
  • Cumin seeds - 1/2 t sp
  • Oil - 1 tb sp
  • Garlic- 3 cloves

First cook Broccoli in half of the oil mentioned above. Once it done, take it out of pan and keep it aside. In same pan add oil and when oil is heated add cumin seeds and onions. Once onion turns light brown add tomatoe and smashed Garlic . Cook them till tomatoe becomes soft completely. If I am out of tomatoe, I usually add Hunt Tomatoe puree 1/3 of small can. Add Coriander powder, Chilli, salt and Cumin powder. Cook for few more minutes. Now Break eggs and add in pan, keep stirring . When eggs are half cooked, add broccoli to it. Try to fold broccoli in eggs as much as you can. Add garam masala and keep stirring until eggs are cooked completely. Garnish with coriander leaves and serve hot with Rice or chappati.
