Doodhi Halwa/Bottle gourd Pudding

Ingredients:

  • 1 kg doodhi/bottle gourd approx 2.2 pounds
  • 1/4 gallon milk
  • 2 cups sugar or more
  • Pinch Elaichi powder (cardomon)
  • saffron few flakes
  • 1 tbsp ghee/Clarified butter

Direction:

  1. Peel and grate Dudhi/bottle gourd.
  2. Put milk and dudhi in a heavy saucepan. Boil till thick, stirring occassionally. Once it starts thickening, stir continuously.
  3. Add sugar and cook further till thickens. Add ghee, elaichi and saffron. Stir on low heat till the ghee oozes out.
  4.  Serve hot, decorated with a chopped almond or pista.
